Keto Nut Fudge
  • 1/2 cup salted butter
  • 4 ounces Sugar Free Milk Chocolate (I love Lily's)
  • 1/4 cup black cocoa powder (or regular cocoa)
  • 1 teaspoon vanilla extract
  • 8 ounces full-fat cream cheese (philadelphia)
  • 1 cup chopped mixed nuts ((such as almonds, pecans, and walnuts))
Instructions
  1. In a microwave-safe bowl, melt the salted butter and low-sugar milk chocolate chips together. You can do this in 20-second intervals, stirring in between, until smooth. Be careful not to overheat the chocolate. Alternatively, you can melt them using a double boiler.

  2. Once the chocolate and butter are melted and combined, stir in the black cocoa powder and vanilla extract until you have a smooth chocolate mixture. Allow it to cool slightly.

  3. In a separate mixing bowl, beat the room-temperature cream cheese until it's smooth and creamy.

  4. Gradually add the confectioner's sugar substitute to the cream cheese, mixing well until fully incorporated.

  5. Pour the chocolate mixture into the cream cheese mixture and blend until everything is well combined.

  6. Mix in the crushed and slivered nuts.

  7. Line an 8x8 inch (20x20 cm) square baking dish with parchment paper, leaving some overhang on the sides for easy removal.

  8. Pour the fudge mixture into the prepared baking dish and refrigerate for about 20 minutes or until it is set.

  9. Once set, remove the fudge from the dish using the parchment paper overhang. Cut it into squares.

  10. Serve your Keto Chocolate Nut Fudge squares and enjoy!
